@herbifoods Summer is coming to an end, but here is one last recipe to say goodbye 💛 ⠀ Originating in Camaiore (Tuscany), “Scarpaccia di Zucchine“ is an Italian classic, using simple ingredients and making the most of it! I first saw this recipe at @Viviana Dal Pozzo 🤗 ⠀ RECIPE (1 large tray) - 1 kg zucchini (3-4 medium, or pumpkin) - 1 large onion - 1.5 tsp salt - 150 g all purpose flour (optionally add some cornmeal or chickpea flour) - 1/2 tsp rosemary - black pepper - 2 tbsp olive oil ⠀ ❶ Finely cut the zucchini and onion using a mandolin (or knife, if you don’t have one like me 🤷‍♂️) ❷ Transfer to a large bowl, mix in the salt and let it sit for about 2 hours, to draw out most of the moisture. ❸ Squeeze out most of the water, combine with flour, herbs and black pepper. Add more flour or water if needed, so you get the consistency of a pancake batter. ❹ Add the veggies to the batter and mix. ❺ Add to a well oiled baking tray and spread out evenly. ❻ Bake at 200°C for 30-50 minutes until caramelized and crispy. ❼ Cut into squares like a focaccia and enjoy as an aperativo or however you prefer! ⠀ TIPS - the zucchini can also be swapped for pumpkin, making this a great fall dish! ⠀

@dr.vegan Spicy Potato Noodles | Recipe ⬇️ Chop and boil -2 potatoes (500g/ 1.1lb) Mash and then add -2 cups all purpose flour (250 g), more as needed And need until a dough is is formed. Roll the dough into long strips, and boil them in water for 3 mins. Drain and then transfer to a bowl. Top with -3 cloves garlic, minced -1 spring onion, -1 tbsp chilli powder -1 tsp red pepper flakes -1/2 tsp sugar -2 tbsp soy sauce -1 tbsp rice vinegar -1/4 cup hot vegetable oil Mix, garnish with sesame seeds and enjoy :) Deutsch: -2 Kartoffeln (500g) Schälen, Kleinscheiden und kochen. Dann pürieren, -250 g Mehl, mehr bei bedarf hinzufügen und kneten bis ein Teig entsteht. Dann zu Nudeln formen und für 3 min kochen. Das Wasser abtropfen und in eine Schüssel geben.
